Ultrafiltrering
Nogle mejeriprodukter gennemgår en såkaldt ultrafiltrering for at opnå en højere proteinkoncentration. Det gælder eksempelvis ymer og ylette.
Mælkens naturlige indhold af protein er på ca. 3,5 g pr. 100 g, men i ymer og ylette skal indholdet være på mindst 5,8 g pr. 100 g.
Princippet i ultrafiltreringen er, at mælken under tryk presses igennem en meget finporet membran, der tillader vand, mælkesukker (laktose) og nogle af mælkens salte at passere igennem (permeat), mens mælkens fedt og proteinstoffer (koncentrat) tilbageholdes. På den måde koncentrerer man indholdet af protein i den mælk, der videreforarbejdes til ymer og ylette.
